AUSTRALIA DAY COOKIES
WHAT YOU'LL NEED:
- Roberts Vanilla Biscuit Mix
- Satin Ice Fondant - White, Red and Blue
- Roberts Bakers Jam
- Roberts Non Pareils -White, Red and Blue
- Roberts Jimmies - White, Red and Blue
- Roberts Perlised pearls - White
- 6cm and 7cm Round Cookie Cutters
- Roberts Flexi Mat
- Roberts Thickness Guides
- Rolling Pin
- Baking Paper
- Two flat baking trays
- Mini Heart and Star cutter - Optional
- Letter Impression Set
Follow the instructions on the back of the packet to make the Vanilla Biscuit dough.
Roll the dough between two sheets of baking paper on top of the Flexi Mat. Use the thickness guides to create perfectly even biscuits. See packaging for detailed instructions.
Slide the rolled dough onto a flat baking tray and refrigerate for 10 minutes.
Whilst it is not necessary to rest the dough, it is much easier to cut and handle cold dough.
Remove the top sheet of baking paper. Cut 7cm discs using the cookie cutter - remove excess dough.
Bake the biscuits according to the instructions on the back of the packet.
Cool completely before decorating.
Roll the White Satin Ice on top of the Flexi Mat. Use the clear thickness guides to create perfectly even thickness. Cut 6cm discs using the cookie cutter.
Attach each disc to a biscuit using a tiny amount of Bakers Jam.
Create Australia Day fun sayings using the Letter Impression Set.
Decorate each biscuit with coloured sprinkles.
Repeat this step using the Red and Blue Fondant.
