Baking sheet vs baking tray
While these terms are often used interchangeably, there is an important difference to note. Both are large, mostly flat metal sheets used for baking, but:
- Baking trays have a small lip on each side. This prevents oils, grease and other liquids from running off the tray, and also prevents baked goods from easily sliding off when you remove the tray from the oven.
- Baking sheets are entirely flat with no lip at all. This allows you to slide delicate foods off them easily, but it also means liquids can run off them when in use.
A good rule is to use baking trays for savoury foods that require oils, like roasted veggies and meats, and baking sheets for desserts like cookies, which can be hard to pick off the oven tray when warm without breaking.

What is a baking tray?
A baking tray is a wide, flat sheet of metal with slightly raised sides used for baking in the oven. They are usually made of aluminium or carbon steel, although enamel and silicone baking trays are also available.
How to clean a baking tray
Because of their non-stick properties, most baking trays should be easy to wipe down with a soapy sponge and warm water. If your baking tray starts to stain from baked-on grease and debris, create a mixture of baking soda and vinegar, pour it over the oven tray and leave it to soak for an hour. Then clean with a firm but not scratchy scrubbing brush or sponge.
How to grease and line a baking tray
You can grease a baking tray using baking spray, oil or even shortening - avoid butter if possible, as this can cling to baked goods and actually make them stick to the sheet. If you wish to line your oven tray as well as or instead of greasing it, most baking paper rolls will be the right size to fit a standard tray, so just unroll a sheet, tear it off and lay the sheet onto the base of your tray. You can also lay your tray onto a large sheet of paper and trace around its base for a more precisely fitted baking sheet, which you can then cut out using kitchen scissors.
