RAINBOW LAYER CAKE WITH OMBRE ICING

Level: Intermediate
What you'll need:
- 1kg White buttercream
- 1kg Cake mix
- Colour mill oil blend food colour in orange, baby pink, candy, yellow, tiffany, lavender
- Sprinkles
Equipment:
- Cake scraper
- Cake decorating turntable
- Piping bags
- Mixing bowls x 5
- 5 x 8in x 3in high cake tins
- 9-inch Masonite Cake Board
- Cake leveller (optional)
- Angled palette knife
Instructions:
Step 1 - Once you have prepared the cake batter, divide it evenly into 5 different bowls. Mix approximately 8 drops of Lavender, candy, yellow, orange and tiffany into separate bowls. Place your cakes into the oven to bake.
Hint: For softer hues, use less colour & for brighter tones use more.
Step 2 - When complete, remove from the oven & sit to cool before handling. Once fully cooled, use a cake leveller or large cake knife to shave off any rounding to create nice & flat tops.
Step 3 - Dab a small amount of white buttercream onto the centre of your 9-inch cake board, placing your tiffany coloured cake layer on top. Pipe white buttercream all over the top of this layer and smooth out to create a flat, even surface. Stack your yellow cake layer on top & repeat this process until all layers are stacked.
Step 4 - Once all layers have been stacked, it's time to crumb coat. Start by piping zig-zagged lines of white buttercream all over the sides & top of your cake. Using a palette knife, spread this buttercream out across the surface of the sides of your cake. Then using a cake scraper, even the buttercream out, creating a flat layer of icing across the sides & top of your cake. Once completed, place your cake in the fridge for 10 minutes to solidify.
Step 5 - Now it's time to colour your buttercream for decorating. Divide the remainder of your white buttercream into three bowls. Colour the first bowl with approximately 8 drops orange, the second with baby pink and the third with a mix of orange & baby pink.
Step 6 - With a similar technique to the crumb coat, pipe the Orange icing onto the bottom half of your cake and the baby pink icing to the top half & top of the cake, leaving a small gap in the middle of your cake for the blended colour. With all three colours applied, use a cake scraper to smooth out the surface, blending the colours into an ombre effect
Step 7 - With your choice of sprinkles, use your hand to apply to the bottom edge of the cake and top border & enjoy!
