Pastel Rainbow Layer Cake Project

Instructions

Tip: Place a towel under the cake while applying sprinkles to catch any that fall.

  1. Divided your cake batter into 6, colour each batter a different pastel shade: pink, butterscotch, peach, pistachio, lavender, and baby blue.
  2. Pour each coloured batter into a separate round cake tin (7 in/17.5 cm). Level each cake to 1in (2.5 cm) tall once baked.
  3. Stack the cakes in rainbow order: pink, peach, butterscotch, pistachio, blue, then lavender, layering each with icing.
  4. Cover the entire cake with a smooth layer of icing using a scraper and spatula. Place it on a white cake board.
  5. Mix pink and white sprinkles, then gently press them onto the sides of the cake. If the icing has crusted, lightly steam the surface to help the sprinkles stick.
  6. Divide the buttercream into five portions and tint each one with a different pastel shade: peach, butterscotch, blue, pistachio and lavender.
  7. Fill piping bags with each colour and, using a 1M piping tip, pipe swirls around the top and base of the cake. Add extra confetti sprinkles over the swirls for a fun finish.
  8. Enjoy your work and refrigerate until you're ready to serve!
