PASTEL RAINBOW LAYER CAKE

What you'll need:
- Mondo Pro Ombre Layer Cake Pan 5 Set
- Over The Top Silky Smooth Icing 2L
- Over The Top Gel Food Colour:
- Pastel Pink
- Pastel Butterscotch
- Pastel Peach
- Pastel Pistachio
- Pastel Lavender
- Pastel Baby Blue
- Mondo Cupcake Piping Set - Tip 1M
- Mondo Disposable Piping Bag 10PK
- Mondo Cake Board Round (White 10 in/25 cm)
- Mondo Cranked Spatula 4.5 in/11.5 cm
- Mondo Stainless Large Steel Scraper
- Mondo Cake Leveller 32 cm
- 2 each x Over The Top Bling Pink and White Sprinkles
- Over The Top Bling Pastel Confetti
Instructions
Tip: Place a towel under the cake while applying sprinkles to catch any that fall.
- Divided your cake batter into 6, colour each batter a different pastel shade: pink, butterscotch, peach, pistachio, lavender, and baby blue.
- Pour each coloured batter into a separate round cake tin (7 in/17.5 cm). Level each cake to 1in (2.5 cm) tall once baked.
- Stack the cakes in rainbow order: pink, peach, butterscotch, pistachio, blue, then lavender, layering each with icing.
- Cover the entire cake with a smooth layer of icing using a scraper and spatula. Place it on a white cake board.
- Mix pink and white sprinkles, then gently press them onto the sides of the cake. If the icing has crusted, lightly steam the surface to help the sprinkles stick.
- Divide the buttercream into five portions and tint each one with a different pastel shade: peach, butterscotch, blue, pistachio and lavender.
- Fill piping bags with each colour and, using a 1M piping tip, pipe swirls around the top and base of the cake. Add extra confetti sprinkles over the swirls for a fun finish.
- Enjoy your work and refrigerate until you're ready to serve!
