Instructions
Step 1: Prepare and Bake Your Heart Cakes
If you're using one pan, you'll need to bake in two rounds.
Grease and line the Mondo Pro Heart Cake Pan, then pour in your prepared cake batter.
Bake until fully cooked and allow to cool completely before removing from the pan.
Repeat this process until you have four layers, each baked to approximately 3cm tall.
Step 2: Level and Stack
Use the Mondo Cake Leveller to trim each heart cake to an even height of 3cm.
Place your Mondo Heart Cake Board on your Mondo metal turntable and secure the first layer to it with a small dot of icing.
Step 3: Fill Between the Layers
Spread a generous, even layer of Over The Top Silky Smooth Icing between each cake layer using your cranked spatula.
Stack the layers carefully, ensuring the heart shape stays aligned from top to bottom.
Step 4: Crumb Coat
Tint a portion of Silky Smooth Icing with Pastel Pink.
Apply a thin, even layer of icing, also known as a 'crumb coat' over the entire cake.
Use your scraper to smooth the sides and guide the icing along the heart curves.
Refrigerate for 15-20 minutes to set.
Step 5: Final Coat
Apply a second smooth layer of pastel pink icing, keeping the edges soft and rounded.
Chill again for 10 minutes to prepare the surface for clean piping.
Step 6: Colour Your Icing
Divide the Over The Top Silky Smooth Icing into two bowls:
- Colour one pastel pink
- Colour the other vibrant red
Prepare your piping bags with:
- Tip 104 for ruffled borders
- Tips 16, 19, 21, 30 for shell borders
- Tip 21 for heart piping and wave patterns
Step 7: Pipe the Vintage Borders
Hold your piping tips at a 45-degree angle and gently rotate the turntable as you work.
Pipe in this order:
- Pastel pink ruffle borders along the bottom and top edges
- Red shell borders above each pink ruffle
- Pastel pink wave pattern and shell borders above the red shells
- In the centre area of the cake, pipe smaller alternating pink and red decorative patterns
- Finish with the heart piping on top of the middle pattern for a bold vintage touch
Tip: Because the cake is heart-shaped, rotate your turntable slowly and pipe in small sections to maintain smooth, even curves.
Step 8: Clean and Chill
Wipe the edges of your Mondo Heart Cake Board for a clean presentation.
Refrigerate the finished cake until ready to serve.
