Cake by Monica Cavallaro - Moreish Cakes
Step 1: Bake the cake - Fondant Prep
- Prepare 500grams (butter cake or similar) or 600grams (mud cake) batter of your favourite cake recipe.
- Spray vegetable oil into the 1/2 sphere baking tin, ensure even temperature. Add 1 tablespoon of plain flour and tilt the sphere around to ensure even coverage of the flour, right up to the lip of the tin.
Pro-tip: If your recipe is low in fat like a sponge cake, repeat the process above to give the sphere 2 coats. - Fill with cake batter to 1 to 2cm shy of the lip of the tin.
Pro-tip: Place the 1/2 sphere on top of a round cake tip to help hold the tin balanced during baking. - Place on a baking tray to capture any over spin in baking and bake as per your recipe until cooked through.
- Once cooked, remove from the oven and immediately turn the sphere upside down on a cake cooling rack for 10 mins when gently tap out the cake from the baking tin.
Pro-tip: If the cake is still not giving, gently pull the cake away around the edge from the edge of the tin and leave upside down for a further 5 mins until it taps out cleanly and easily. - Once cooled, place the cake back into tin and using a serrated knife and the top lip of the sphere baking tin, slice any excess cake off. Place the sphere back upside down to avoid flat bottoms on the sphere and enjoy any offcut with a cup of coffee/tea as a snack.
Step 2: Buttercreaming the Cake
- Spread a tablespoon size of Over the Top Buttercream onto a 10" white Mondo Cake board.
- Place the cake, cut side down. Ensure it's centred and gently press to ensure the cake is secured to the board.
- Using an offset Mondo spatula, cover the entire dome with remaining buttercream and smooth the surface, ensuring the board is cleaned of any excess buttercream. Store remaining buttercream in the fridge for up to 3 months.
Step 3: Cover the cake in Fondtastic fondant
- Roll out white Fondtastic fondant to approx 3 to 4mm thickness with the Mondo rolling pin, ensuring it's wide enough to cover the cake dome.
- Cover the dome with the rolled-out fondant and gently with your hands smooth the fondant down the sphere. Using the Mondo Fondant Smoother, smooth the sphere, paying extra attention to the base of the sphere.
- Using the Mondo Embossing Wheel with the smooth wheel, trim off any excess fondant close to the base of the sphere. Remove the excess fondant and using the smoother, smooth the base of the cake.
Step 4: Make the black hexagons
- Roll out fantastic black fondant. Using the smaller hexagon template and your mondo embossing wheel with the smooth roller blade, cut out 7 hexagons.
- Change the smooth roller blade over 2 the imposing roll and in both edges of each of the seven black hexagons to create a stitching pattern.
Step 5: Placing the Hexagons
- Brush a little Over The Top Edible Glue onto the centre talk of the sphere. Place the first hexagon shape firmly into place.
- Using your wheel embosser with the small wheel in place, and the large white hexagon shape as a guide, use the wheel from each point of the black hexagon to follow the shape of the white hexagon guide. Please note you are only doing one single line for this step.
- Next, at the end of each of those lines, place some glue and attach the remaining 5 hexagons into place.
- Then, using the imposing wheel, complete the white hexagon shape connecting each of the gnu black hexagons to each other.
- Swap the smooth embossing wheel to the stitching pattern wheel and go around each of the white hexagons to add additional stitching details to the sphere soccer ball.
Step 6: The Grass
- Roll out the green fantastic fondant, enough to wrap around the base of the cake to approximately 4 centimetres high and using the smooth roller on the embossing wheel, trim out some blades of grass.
- Brush along the bottom of the cake with the Over The Top edible glue and gently press the grass around the base.
- Using the tips of your fingers, tease out the edges of the grass and even twist some of the ends to create a more organic look.
