Do you have any tips for using food colouring?

It is essential to add your food colouring in tiny amounts, building up the intensity of the colour over time and mixing it throughout. Whilst it is always possible to add more you cannot take any away, and it is easy to go too bright or too dark. Also remember that colours darken over time, and after baking, so sometimes it is essential to allow your bake to stand for around ten minutes to get the shade that you desire.

Create your coloured mixtures using natural light, as this will allow for accurate perception. If you do not have the colour that you need to hand, then mix colours together. It is also important to have a bit of knowledge regarding what colours blend together, and this will also allow you to gain a better understanding of the colour wheel and what matches. For example, mix equal amounts of blue and yellow to make green, red and yellow to make orange, red and blue to make purple and so on.
