Chocolate Making FAQ

What is chocolate making?

Chocolate making is the art of melting chocolate buttons and turning them into liquid chocolate that can be shaped, drizzled, poured or used as a glaze. You can do this with milk, dark and white chocolate, as well as more unusual varieties like Ruby chocolate if you have it on hand. Melted chocolate can be eaten straight away in liquid form, added to another mixture or allowed to harden and then eaten as a solid chocolate bar or shape.

How can I temper chocolate at home?

Tempered chocolate is smooth, shiny and hard with a great snap. Objects dipped in tempered chocolate won't need to stay in the fridge, and will stay hard when stored at room temperature. Make sure to use chopped up, high-quality chocolate bars for melting over chocolate chips if you can!

Use the double boiler method (a saucepan filled with water and a metal or glass bowl over the top) instead of a microwave, and make sure to melt ⅔ of your chocolate first. Melt at around 45℃ for dark chocolate and 43℃ for milk and white - then remove from the heat. Add your remaining chocolate and mix until the temp drops to around 29℃, then reheat by placing the bowl back over the bowl for 5-10 seconds at a time until the temp goes back up to 32℃. And you're done!

How do I use candy melt?

To heat your candy melts to a liquid texture that is perfect for moulding you need to soften them first, and there are a number of ways that you can do this.

You can put your candy melt into a microwaveable bowl and microwave on the defrost setting for one minute. Stir thoroughly before continuing to microwave for 20 seconds, and stir after each interval until your candy melt is the right consistency.

You can also melt your candy using the double boiler method. Add water to the bottom of the pan and heat to a simmer. Remove from the heat and place your candy melt in a bowl, on top, stirring consistently until completely melted. If you are melting a significant amount, you can also use your slow cooker on the lowest setting where you can melt up to around 2kg of candy this way. However, it is not a suitable method when using only small amounts. It is also important not to overheat your mixture, as this will result in the candy melt losing its proper consistency.
