Choosing the right material for your baking dishes
How important is the material when it comes to dishes and other bakeware? Have you ever wondered if you could substitute a glass dish when a recipe calls for a metal tray? This quick guide to using glass, metal, ceramic, and silicone pans will help you to decide.
Metal - Light-coloured or shiny metal bakeware is the best for even browning, while darker-coloured metals can cause over-browning (though darker is great for getting deep golden-brown crusts on bread!). Aluminium is better than stainless steel for conducting heat and baking foods evenly, but be careful of storing foods in aluminium pans - the aluminium will react with acids in the food and give them a metallic flavour.
Glass - Glass conducts heat extremely well, which can be both an advantage and a disadvantage. Recipes with a lot of sugar might start to burn before being cooked all the way through, but glass is fantastic for making casseroles, bread pudding, and other dishes where browning is less important. Glass is also non-reactive, so you can store foods in the baking dish without worry that it will pick up metallic flavours.
Ceramic - In many ways, ceramic is like glass: it conducts heat very well, but can cause over-browning in sweet dishes. The biggest advantage of ceramic is that these dishes look very pretty. That makes them ideal as oven-to-table ware. Simply take the pasta, pie or other baked food out of the oven and serve at table from the dish.
Silicone – Silicone bakeware is becoming more and more widely available. Although the floppy texture may cause you to worry if the silicone will be suitable for high oven temperatures, it is in fact extremely suitable, and if you have problems with baked items sticking to metal or glass pans, you will find silicone releases products a lot easier. However, silicone is a poor heat-conductor and baked goods tend to brown less when baked in silicone moulds or trays.
